Gourmet Skookie Pizzas!

I had the opportunity over the weekend to go to a gourmet Skookie pizza party! My friend put together the party, and we had such a fun time. She bought a lot of different ingredients that weren’t your typical pepperoni pizza, it was a gourmet pizza party! Here is a list of some of the great pizzas we came up with and some pictures (not great pictures…I need to work on my photography skills!).
To make pizzas:
Use either a store bought or homemade dough for the pizza crust. Form dough into oiled pan and press to the edges of pan. Place in 400 degree oven and pre-bake the crust for 7 minutes. Remove from oven and add toppings. Return pizza to oven and cook another 7 minutes, or until cheese is melted and crust is starting to brown.
Prosciutto and Arugula pizza / Goat cheese and Mushroom pizza
Prosciutto and Arugula Pizza
• Arugula leaves
• 2 oz. fresh mozzarella
• Pizza sauce
• 3 very thin slices prosciutto
Pizza Bianca / Pesto pizza (in the background)
Pizza Bianca (great appetizer)
• 1 large garlic clove (crush clove and spread on crust)
• 1 tablespoon extra-virgin olive oil
• 3 slices fresh (or grated) mozzarella
• 1 tablespoon rosemary leaves
Pesto Pizza
• Pesto
• Fresh mozzarella
• Roma tomatoes
(some also added chopped artichoke hearts, and pine nuts…delicious!)
Goat Cheese mushroom pizza
• Goat cheese (plain)
• Shitake mushrooms
• Yellow onion
• Balsamic vinegar
• Mozzarella cheese
Sauté mushrooms with onion. When onions are cooked through, pour about 2 tablespoons of balsamic vinegar into mixture.
BBQ chicken pizza
• BBQ sauce
• Chicken
• Red onions
• cilantro

How much and what kind of dough do you use to make these pizzas? Also, maybe you could explain what temperature and how long these should be cooked. I am guessing that any oven would work.

Thanks. I never thought of using these skillets for anything besides the skookies. I will have to give the pizzas a try. I will be the best grandma ever. Personal pizzas coming right up.

How do I get recipes for the Skookie Cobbler Pots? I would like to do something other than the cobbler mix which comes with them. Thank you!
